Makes 16 medium cupcakes 1/2 cup unsalted butter, room temperature 1 1/4 cups sugar 1 large egg 2 1/2 tablespoons fresh lime juice 1 tablespoon finely grated lime peel 1/4 teaspoon neon green food coloring 1 cup all-purpose flour, sifted 3/4 cup cake flour, sifted 1 1/2 teaspoons baking powder 3/4 cup buttermilk Lime Curd (recipe to follow) Swiss Meringue (recipe to follow) Candied Lime Zest (recipe to follow) Preheat the oven to 350 degrees. We have another delicious Good Gracious recipe from our Food, Fun, Love cookbook: Cucumber Yogurt Dill Soup. YUM! Recipe below! 1 english cucumber, peeled seeded and coarsely chopped 3 tablespoons fresh chopped mint 2 large scallions 1-1/2 tablespoons chopped fresh dill 1 clove garlic crushed 2 cups low-fat or non-fat yogurt Salt and ground white pepper Garnish: cucumber wands In a food processor or blender, puree the cucumber, mint, scallions, dill and garlic until well combined but not smooth. Add yogurt and continue to puree until smooth. Chill for 4-6 hours over night. Adjust seasonings and serve the soup in
